Sal grew up spending his summers visiting family in Calabria, Italy where he inherited the love of freshly prepared local food. His family carried on the traditions of making cheese and salumi at home here in New Jersey. After receiving a degree in business at Monmouth University, Sal followed his true passion of cheese making. It has been over 6 years since he started this journey which has led him to Hillcrest Orchard and Dairy in Branchville, NJ. Partnering with the farm, Jersey Girl Cheese now produces some of the most authentic fresh and aged Italian style cheese enjoyed both in homes and some of the finest restaurants throughout New Jersey. The making of curd from fresh milk is an art; almost a dance of experience and talent. Love, passion, and human wisdom, that is the secret. This creates an amazing end result from a delicate balance of age-old traditions.
