Ingredients
- 12oz Chop Box SignaturePRIME® Filet Mignon Bites
- 2 tbsp unsalted butter
- 1 tbsp avocado oil
- 4 garlic cloves, minced
- 2 sprigs fresh thyme or rosemary
- Kosher salt & black pepper
- Fresh parsley, chopped, for garnish
- Flaky sea salt, for finishing
Instructions
- Pat filet bites completely dry with paper towels. Season generously with kosher salt and black pepper.
- Heat a cast iron skillet over high heat until smoking. Add avocado oil.
- Add filet bites in a single layer — do not crowd the pan. Sear 1–2 minutes per side until deeply browned. Work in batches if needed.
- Reduce heat to medium. Add butter, garlic, and thyme to the pan.
- Toss bites in the garlic butter for 30–60 seconds, basting continuously.
- Remove from heat. Target internal temp: 125°F for medium-rare.
- Rest 2 minutes. Finish with flaky sea salt and fresh parsley. Serve immediately.
