Steakhouse Smash Burgers — The Ultimate BBQ Upgrade

Forget everything you know about backyard burgers. A steakhouse smash burger is in a completely different league — crispy, lacey edges and a richness that standard patties simply can't match. The secret? Chop Box Steakhouse Slider patties — pre-portioned at exactly 3oz, the perfect size to smash into a full-size burger with maximum crust. Two patties, one bun, zero compromise. This Memorial Day, make something your guests will actually talk about.

Ingredients

Makes 4 burgers

  • 2 packs Chop Box Steakhouse Slider patties (3oz each, 4 patties per pack) — thawed overnight in the refrigerator
  • 4 full-size brioche buns, toasted
  • 8 slices American cheese
  • Kosher salt & black pepper
  • Smash sauce: ½ cup mayo, 2 tbsp ketchup, 1 tbsp yellow mustard, 1 tbsp pickle brine, pinch of garlic powder
  • Toppings: shredded lettuce, white onion, dill pickles

Instructions

  1. Thaw patties overnight in the refrigerator. Remove from packaging when ready to cook. Do not reshape — the pre-portioned 3oz puck is ready to smash as-is.
  2. Heat a cast iron griddle or flat-top over high heat until smoking. Lightly oil the surface.
  3. Place one patty on the griddle. Immediately smash flat with a heavy spatula or burger press — press hard and hold for 10 seconds.
  4. Season with salt and pepper. Cook 2–3 minutes until edges are deeply browned and crispy.
  5. Flip once. Immediately place a slice of American cheese on top. Cook 1 more minute, then set aside.
  6. Repeat with a second patty and second slice of cheese. Stack both patties on a toasted bun — the cheese layers melt together as they stack.
  7. Mix smash sauce ingredients and spread on both bun halves. Top with lettuce, onion, and pickles. Serve immediately.

Chef's Tips

  • The smash is everything — don't be shy. Maximum surface contact = maximum crust.
  • Pre-portioned patties mean zero prep mess and consistent results every time.
  • Fancy cheese has its place — this isn't it.
  • These cook fast — watch your heat and don't walk away.
