A savory, smoky steak with a rich crust and deep flavor.
Ingredients
- 1 (12 oz) NY strip steak
- 1 tbsp avocado oil
- 1 tsp finely ground coffee
- 1 tsp brown sugar
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 tbsp butter (optional)
Steps
- Pat steak dry.
- Mix coffee, brown sugar, paprika, salt, pepper, and garlic powder.
- Rub steak with olive oil, then coat evenly with the coffee rub.
- Heat a skillet over medium-high heat.
- Cook steak 4–5 minutes per side for medium-rare, or to desired doneness.
- Add butter in the last minute, if using, and spoon over steak.
- Rest 5 minutes before serving.
Key Tips for Success:
- Prevent Burning: The sugar can burn, so keep a close eye on the sear and ensure the heat is not too high (medium-high is usually best).
- Use Fine Grounds: Use very finely ground coffee or espresso powder to prevent a gritty texture.
