Ingredients
- 12oz Chop Box Choice Beef Tenderloin Tails, sliced thin against the grain
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- 2 tbsp avocado oil, divided
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 2 scallions, sliced
- Steamed rice or noodles, for serving
- Sesame seeds, for garnish
Instructions
- Slice tenderloin tails thin against the grain. Toss with soy sauce, oyster sauce, sesame oil, and cornstarch. Marinate 10 minutes.
- Heat a wok or large skillet over high heat until smoking. Add 1 tbsp avocado oil.
- Sear beef in a single layer, 1 minute per side. Remove and set aside. Work in batches — don't crowd the pan.
- Add remaining oil. Stir-fry garlic and ginger 30 seconds until fragrant.
- Add broccoli and bell pepper. Stir-fry 3–4 minutes until tender-crisp.
- Return beef to the pan. Toss everything together 1 minute.
- Serve over rice or noodles. Garnish with scallions and sesame seeds.
Chef's Tips
- Slice the beef as thin as possible — it cooks faster and stays more tender.
- High heat is essential for a proper stir-fry. Don't turn it down.
- The cornstarch in the marinade creates a silky sauce that coats everything beautifully.
