But here's what most people don't know: USDA Prime is a range, not a guarantee. And at Chop Box, a range wasn't good enough.
The USDA Grading System, Explained
The USDA grades beef on two primary factors: marbling (the intramuscular fat that creates flavor and tenderness) and maturity (the age of the animal at harvest). The grades, from highest to lowest, are:
- Prime — Abundant to moderately abundant marbling. Found in roughly 3–5% of all graded beef in the U.S.
- Choice — Moderate to modest marbling. The most common grade in grocery stores.
- Select — Slight marbling. Leaner, less flavorful, less tender.
USDA Prime is genuinely excellent beef. But within that Prime designation, there's still a wide spectrum — from beef that barely qualifies to beef that's truly exceptional. The grade tells you the floor, not the ceiling.
