How to Cook

Thaw overnight in the refrigerator. Score the skin in a shallow diamond pattern, taking care not to cut into the meat. Season generously with salt and pepper.

Place the duck breast skin-side down in a cold pan, then turn the heat to medium. Cook slowly until the fat renders and the skin becomes deeply golden and crisp, about 16–18 minutes. Flip and cook meat-side down for 1–2 minutes until medium-rare to medium.

Rest for 7–10 minutes, then slice and serve.
